Great paid holiday day. Eating protein and preserving garden veggies. And prepping for tomorrow’s canning.

I cooked and tried the first Spaghetti Squash I’ve ever grown (amazing), preserved some vac sealed bags of that, and had some left for dinner this week.

I cut all the veggies and defrosted the packs of prime stewing beef cubes for pressure canning stew tomorrow. Complete with home cured salt pork fat to add some fat.

It was also nice watching BTC gains outpace what I would have made at the fiat mine this week, while updating nodes, updating wallet firmware, stamping seeds, imaging hard drives, and dreaming of the next halving.

And laughing my ass off at my follows’ Nostr posts.

Hey fam. I’ve been thinking a lot over the past five days that I’ve had off from the fiat mines about how I can add value to the Nostr community.

One awesome thing about these American Standards is that they can be used over coals, a propane BBQ or a propane burner if the grid is down, and because the lids and the top of the vessel are machined to such a fine tolerance, they have no seals that eventually harden up, crack and need to be replaced. And the fact that they maintain pressure with a shaker weight makes them super low tech. You know you have hit the sweet spot on temperature and pressure when you can adjust your temperature with the 10 or 15 psi weight on it, and it shakes one to four times every minute. Even if the gauge isn’t calibrated you know you’re good, and achieving 240°F.

Good show. And great point about the US government telegraphing the shit out of their intentions towards Bitcoin. Their inability to move swiftly on anything other than siezures is something to consider.

It’s definitely worth getting one of these American Standard pressure canners. They have intrinsic safety features that make catastrophic vessel failures impossible, and they put safe preserving of low acid foods, meat and fish within your reach.

The next couple flats of quart jars are all going to be beef, venison, and beef stew.

Part of the beauty of pressure canning is not having one’s entire red meat supply dependent on the electrical grid and running freezers. The other great thing is speed of meal prep. Since it’s already cooked, you can just warm up a can of premium beef or venison cubes in a saucepan and it’s ready to add to whatever other dishes you have in the side.

With the salt pork fat, garlic, and onion pieces that go into the jar with the cubes of meat prior to canning, it ends up being pretty tasty.

Pressure canning squash for the prepper pantry. I’m not expecting it to be any amazing delicacy or anything, but it’s pre oven-cooked, well seasoned and easy to strain and empty into a mixing bowl for mixing with butter and salt in lean times. I figured I sank the time into watering and feeding them for 3 1/2 months, so I might as well make the most of it. #prepping #preserving #canning

When I broke my arm the wire coat hanger that I modified so I could stick it between the cast and my skin without poking myself was a Godsend. But depending on the type of cast you have, it may not be so simple for a leg. Not medical advice, as it will degrade the dressing between the fibreglass and your skin.
