Another night with temperatures in single digits.

The cows have a thin layer of frost on their backs.

This is good.

It tells me that their back fat and winter coats are keeping them insulated in these frigid temps.

Our job is to give them plenty of hay and water to fuel their bodies.

We got this.

A resilient pantry means delicious meals from stored food. It is possible.

Tonight's dinner is a curried apple butternut squash soup.

It is a soup you would order from a restaurant. I get raves from everyone I feed it to.

I am able to pull it together from my food storage.

Butternut squash - easy to grow, abundant, stores well all winter

Spiced apples - canned from a neighbor's apple trees. Taste great in this soup. Also great with oatmeal, as a side to roast pork, or on top of Dutch Baby pancakes.

Apple juice - made from the skins and cores of the apples above. Canned for long term storage.

Roast the butternut squash. Combine in a pot with the following. 1-2 cups spiced apples. 1-2 cups apple juice. 1 knob minced ginger (1 tsp dried). 2 tsp curry spice. Salt to taste. Blend with immersion blender.

Yum.

He loves to play in the snow and eat the ice. The Great Pyrenees are built for this weather, but we will bring them in if it is too cold so they can rest and warm up.

This amount of snow is unusual for our area of the United States.

Heavy clouds bringing light flurries as I walked the dogs this morning.

This next cold front will bring us back down to zero before we warm up to normal winter weather next week.

This extreme allows us to plan for more resilience going forward.

GM. Heard birdsong this morning as we stomped through snow in 6 degrees to feed the animals. It was notable and uplifting.

With temperatures plunging to -8F and not getting above freezing this week we have had to work extra to make sure the livestock have water.

One tip I learned last year was to keep water in a large thermos. This works great for our sheep. The coldest temperatures only resulted in a thin layer of ice at the top of the container. At no point has it frozen solid. It also retains the heat longer when we pour in warm water.

Water is life.
