Amethyst seems to have a severe battery management problem or however one might call it. Today I used it for ten minutes or so yet it was responsible for 1/4 of the phones total battery drainage. It always runs in the background even though I didn't permitted it to run in the background. This happens on two different phones (Pixel 8a and Pixel 6a). From now on I'll force-stop the app after closing it.
Happened to me yesterday on CalyxOS too. Once I sent a voice message in nostr:nprofile1qqsvnx99ww0sfall7gpv2jtz4ftc9v6wevgdd7g4hh7awkpfvwlezugpzamhxue69uhhyetvv9ujuurjd9kkzmpwdejhgtcmhemfz the app was using my microphone forever. The green dot disappeared after restarting the phone. Even if you force stop SimpleX it will continue to access the microphone. You really have to hide the app or restart the phone. Annoying.

I'm searching for a way to index all my photos and documents on my de-googled Android. It has to be open source of course and all the OCR-/Tesseract work has to be done locally. I don't want to run a dedicated server and I'm not looking for a backup solution. I just want to have a daemon running on my phone which does all this in the background. Thanks!

I'm afraid you'll have to content yourself with Joinmarket at the moment. It's been around for a long time and is fairly battle-tested but the learning curve is pretty steep and you have to be very cautious. You could be surprised by the fees. I remember back then when I paid dearly over and over again even though I had read the documents very carefully, watched several tutorials and tweaked the config file, but considering the current fee market things can't go that wrong :)
