Made an awesome salad the other night. I’m just calling it “Summer Salad”. Posting the recipe in case anyone wants to also make it. #grownostr #foodporn #summersaladinspring #nostrfood
Summer salad
Dressing/marinade
1/4-1/2 cup fresh squeezed lime juice
2-3 tbsp fish sauce
1 Jalapeño diced
5-6 cloves Garlic chopped
Fresh chopped cilantro (1/4 of a bunch)
Fresh chopped dill (2-3 tbsp)
Fresh chopped mint (2-3 tbsp)
Salad
Cucumber
Radish
Cabbage
1 Shallot
1 bell pepper
1 tomato
1-2 avocados
Green onion
1-2 carrots sliced
3 small honey Mangos or 2 large mangos chopped
Fresh dill (3 tbsp or more to taste)
Fresh chopped cilantro (rest of the bunch)
Fresh chopped mint (1/2 cup)
Toasted rice powder (sprinkled on top)
Meat
Shrimp or fish or chicken
Combine all ingredients for marinade together in jar/bowl, pour enough on top of fish for marinade, put the rest in the fridge and reserve for dressing. Marinade for 1-2 hours, longer if desired.
In a hot pan, add some fat (butter, olive oil etc per preference) pan sear fish/chicken/shrimp until cooked (for fish or chicken try to get a nice crisp crust created), once all the meat is cooked, take the remaining marinade and deglaze the pan with it. Simmer for a couple minutes to get all the bits from the pan. Transfer to dressing container in the fridge. Let chill until ready to serve.
To make toasted rice powder take 1/4c rice and toast in a frying pan (dry) until rice turns a golden/toasty brown color. Grind mixture in spice grinder/coffee grinder until powdery consistency is reached.
Chop up all desired salad ingredients in a large bowl. Mix well. Pour on desired amount of dressing and mix again.
Top with toasted rice powder and serve! Reserve some green onion for garnish on top if desired!

We just keep ours on the counter. It doesn’t stick around for long lol. We go through it so fast!
Day 7 #grownostr initiative
Had a beautiful rainbow show up this evening. A real rainbow. Natural, beautiful and glorious! #nature #getoutside

Oh of course. We will take some pictures. But just so you know we do things a little differently than most other people. We don’t keep them in cages they are in a large arena type enclosure.
We usually make ghee out of the Amish roll butter but we are hopeful to get a regular source of local cream!
Day 6 of #grownostr initiative
Today has been a “relax day” for us. Started with doing dishes and cleaning the house, working on the bunny enclosure, picking up more bunnies, grocery shopping, meeting up with the leader of a north Idaho homestead group and sushi for dinner. #[1] and I are grateful for the opportunity to relax 🤣
That whole setup looks great! Excited to see what kind of yield you get!
Day 6 #grownostr initiative
@moglibare and I experienced another successful freedom exchange in north Idaho. Had a successful day! Around 70 people showed up. A lot of new faces even! Lots of solid #community building took place today. #NIFE

I believe it was arugula. It was very tasty!!
Ingredients:
3-3.5c flour
1/2 tsp baking powder
2tsp salt
2tbsp honey
1c warm water (110° F)
1 egg
1 packet yeast (2 1/4 tsp)
1/4c plain yogurt (we used Greek)
Prep work:
If making pizza heat oven to 350°
1: combine water, yeast and honey. Let sit until yeast bubbles (yeast should be activated within about 5-10 minutes)
2: in a separate bowl while waiting for yeast to activate - sift flour, baking powder, and salt together
3: after yeast is activated combine beaten egg and yogurt into the liquid and combine wet ingredients before adding in dry ingredients. Once liquid ingredients are combined add sifted flour mixture together and incorporate by kneading for 3-4 minutes into a slightly sticky ball (you can also use a mixer with a dough paddle attachment if you prefer)
4: place dough ball into a slightly greased bowl and cover with a kitchen towel to let rise for about 30 minutes in a warm spot
5: place dough onto lightly floured surface and separate into smaller sections. The bigger the section the bigger your piece of naan will be (I probably didn’t need to say that but I like to roll small sections out as thin as possible to get the best naan bread effect possible)
6: roll out naan bread to desired thickness. The thinner the bread is rolled the better effect it has.
6.1: at this point heat cast iron pan or whatever sauté pan you have available
7: place flattened dough onto preheated pan and let cook until the top is bubbling. Flip after about 1-2 minutes or until dough is slightly browned on the bottom. Cook another minute or two until other side slightly browns.
8: either serve warm with whatever entree you like (or just enjoy alone with honey and butter melted together 🤤 or garlic butter) or use as a base for a pizza, top as desired (let your imagination run wild) bake until it looks like pizza and enjoy!qq

Day 5 #grownostr initiative
Time for a little pizza planning Friday night. Working on ideas for the #NIFE tomorrow. We plan on having Kids Korner involving painting some rocks and playing some games!

Day 4 of #grownostr initiative
Big day trying to brainstorm and prep for the North Idaho Freedom Exchange on Saturday #nife. Hoping to actually get a chance to take pictures this time lol!
This is the response from my husband Question… how often do they go on vacation? (How often are they outside?)
Watermelon and peppers will NOT like that temperature, would not leave those out overnight
The other ones would depend on how often they stay outside.
Trick is to use fenugreek leaves! I kept making it and having it not taste quite right. Then we got the fenugreek leaves and it worked like magic!
