I believe any species of fir or pine will work. as far as uses it can be used in place of maple syrup in lots of things. I've never tried but it is supposed to be good with game meats and in cocktails. Just sounded like something I wanted to try.
Productive day. Shiitake blocks going in to buckets to fruit. No pics but the oyster buckets are also fully colonized with spawn and should be ready to fruit soon. Love the promises that spring brings.

Collecting spruce tips and immature cones today to try my hand at making mugolio for the first time. It's just sugar and spruce tips/immature cones layered with sugar and allowed to ferment for several weeks. It creates a thick syrup with a fresh "piney" flavor. To buy it costs $25-50 per half a cup. But to make it costs mere pennies.

I'm super stoked by this pic. Several years ago I found out a out a strain of corn known as Tama Flint. It's a flint corn that was selected over generations by the Meskwaki tribe of Iowa (Tama). The selected strain is a deep red color. I live in iowa and am super interested in local and native foods. I contacted the Meskwaki tribe trying to get some seed. I found out that they don't sell or give seed to non natives. After scouring the internet I found a sees saver in Louisiana that had a small amount of seed that he was willing to part with. I planted some of that this spring and this is it sprouting (along with a few weeds, lol). Some of the seed was not the deep red that is the pure strain, so I'm sure that I will have some different colors in this crop. I also have tons of modern GMO corn being grown all around me so I don't know how that will affect pollination. But, regardless, I'm excited to be growing this variety of corn!
