VPNs can help you to hide your traffic so that your ISP doesn't know what you are doing. You move trust from the ISP to a VPN provider. There are good providers out there. If you want to have a more trustless setup install your own VPN server which is pretty easy.

Rent a VPS anonymous from us or choose any provider you want. But thats a much more trustless way.
Also you have the advantage that your IP isn't blocked by some services as it doesn't belong to a well known VPN subnet.

For personal file transfer bewteen your phone and your Linux computer, the traditional SFTP transfer is still more convienent as it integrates right into some file browsers, such as Material Files.
