As far as "defining" goes, by far, the answer is The Lord of the Rings. Tolkien created a rich enough world that it fascinated me when I discovered it around the age of 14 and I still get something out of it on rereads today. Listened to the Andy Serkis audiobooks with my son earlier this year.
Also read through all of the Shannara series and The Wheel of Time in my formative years.
I've read and enjoyed all the other fantasy series you listed except Stormlight, but not until I was in my early thirties.
My other favorite series is Dresden Files. Currently working my way through the audiobook versions, having already read the printed books in the past.

Belt sander is fastest if you have access to one.
It can also be done with a Norton stone or diamond stone. Start with coarse and set your angle. Then continue to fine.
You can color the edge with a marker so you can easily see where you're removing material.
To really refine the edge, finish by stropping on leather or even high grit sandpaper (something in the 600 to 2000 range).
Never stop learning new skills.
Over the past few weeks, I've been teaching myself leather working.

As a knife guy and outdoorsman, I have many blades that need sheaths and several pieces of random gear that could use custom pouches. It tends to be time consuming and expensive to seek out the perfectly sized pouch or have custom sheaths made. Hence the decision to make things myself.
These are just a few examples of what I've made so far. I don't consider anything I've made yet to be of sellable quality, but it is all perfectly functional.

Conservation agent guessed it to be 2-3 years old, female, not quite to breeding age.
Bears over 1 year are legal to harvest.
She was hiding out in the brush on the very edge of public land within a half mile of a housing development and a golf course. Lots of potential to become a nuisance animal if she hadn't already.
Navigation and comms while I was backcountry.

Garmin inReach for GPS readings and the ability to send text messages through the GPS satellites.
Map and compass for backup if electronic devices fail, and because I just like looking at a physical map.

Spent 10 days off-grid on Hardscrabble Mountain in Colorado.
There were four of us in our group. My brother filled his bear tag. Another guy had an elk tag, but we never could get within range of a legal buck. I went as the designated camp cook and bushcraft/survival specialist.


On day 2, the mountain dumped 12 to 18 inches of snow on us and temperatures dropped to single digits. It became a great opportunity to test our skills, gear, and fortitude.

Currently working on a tree removal job. The hard part is now finished.
These were the two high-pressure, stressful trees to fell. A proper hinge cut and plenty of straps and an 8-ton come-along helped avoid dropping them on the house or on the wrought iron fence.
