When I first found their butcher shop last summer, I asked to pay in BTC at checkout, because, on seeing the quality of their huge selection, I knew I would be ordering all my meat from them.

At the time, the team didn't have a good way to accept BTC, so...

we took a low-time preference approach.

Over the course of the next 8 months, the staff & I became good friends. I went to their carnivore meetup, we went shooting together, & I grabbed lunch with the owners to talk more about BTC infrastructure options for merchants.

They began by selling meat door to door & at farmers' markets. A serendipitous series of events led to the co-founders acquiring a buffalo ranch in New Mexico.

Through proof of work their meats are now in over 1,000 restaurants & stores in New Mexico.
