Baked some sourdough morning glory muffins this morning. I've never had carrot cake, but I imagine it tastes similar. It has shredded carrots & apples!

I used melted butter instead of vegetable oil and omitted the coconut. Instead of putting the chia on top, I mixed it with the wet ingredients so it would hydrate and just sprinkled a couple pumpkin seeds on top. I also used active starter since it was ripe.
