Imho the issue with Payjoin is that the incentives aren't clearly aligned to onboard merchants to use/support it at scale. From a user-side there are benefits and incentives to use it (if we discard potential UX hurdles for a moment), but currently there's too much regulatory unclarity for businesses to even consider offering it.

Tbh I totally get where this stems from and I've thought like that for the recent years too.
However, by now I don't think it'll work that way and this attitude won't lead to a happy life, unless one is aiming to live mostly isolated. It's a broader topic and goes beyond the properties of what sound money can provide, but both ends can profit off of each other – that's also why I formulated it in that circular way.
