The discovery of how to use fire is one of the of the reasons we survived as long as we did.

I'm sure its quite disgusting but there are people who swear by raw beef. Some nutrients remain more intact without heat, but heat makes some nutrients more bioavailable. The trade off for raw isn't worth it IMO, as the amino acids are some of the nutrients made more bioavailable when cooked (but not overcooked). Other than that, the only real difference is taste.
