They're all Progressive Web Apps, which means you can install them on your phone to behave like a regular app.

ActivityPub/Mastodon => An instance is like an agent/publicist you work exclusively with. You tell them all your gossip and they're the one that other people go to get your gossip.
Nostr => You have multiple agents/publicists that you tell your gossip to, and other people can get your gossip from any of them.
Just like how Nostr is the protocol/language that relays and apps like Damus speak.
ActivityPub is just a protocol, it's the "language" that Mastodon apps and instances speak to each other in.
This is why I see apps like Signal as stopgaps until iPhones implement RCS. It can be E2E encrypted and is basically an upgrade to SMS on everyones phones, so no one has to install another app, it's just their regular texts but upgraded with typing indicators, read receipts, group chats that actually work, etc.
