🧐 I don't know South African Sign Language, but I do notice a few similarities b/w it + ASL (ie signs like "to-look-forward [into the future]), as well as some ASL letters.
W/o being fluent in S.African Sign, I can only say the interpreter *looks* like she's keeping up w/ the source mssg (👍), and displays appropriate non-manual markers (facial expressions/shoulder shift/body mvmnts)-
You can compare it to this notorious fake South African "interpreter"- Even without knowing the language, you can see BIG differences b/w your video + this one...

(ah, yes- The interpreter on the 📺... I've been offered such interpreting assignments (emergency/health broadcasts), but never liked the idea of being on 📺. A few of my colleagues enjoy it, though)
Most of my interpreting experience is in Education HS/Uni, Healthcare (Hospitals, Psychiatric Facilities), Law Enforecement (police/investigations), social work visits, etc. - a dynamic career, for sure!

Yes, the ASL alphabet uses just one hand; Others like French Sign, Australian Sign, etc use two hands simultaneously.
And yes- Things like the fun "artsy" play-with-signs/jokes will be affected if one becomes Captain Hook 🪝
Well... *some* of us are ambidextrous, so we could spare one hand (though, definitely optimal)
