Pixel is the only model I know of that the bootloader can be relocked after writing the OS. That means other phones will be vulnerable if someone has physical access to your device.

VPNs can keep logs. They can also be compelled to monitor you legally. It works fine for most day to day things but if you need to be totally sure it's not always reliable.
It all depends on your threat model. If you just don't want your ISP knowing your habits a VPN should be fine. If you don't trust your government TOR may generally be fine. If you need to do something that is illegal in your country bouncing through multiple proxies in multiple jurisdictions is a common tactic. If you need to hide from a three letter like the NSA or CIA for an extended period of time.... you're fucked. They have the resources, manpower, expertise to eventually get you wherever you are. You'll mess up eventually and they'll get you.
If an entity controls a portion of entry and exit nodes they can correlate connections in and out through timing attacks. It's how they nabbed Ross Ulbricht.

I'm in a not dissimilar situation but different reasons. I made a mistake picking RAID5 in my array and when I added drives I got larger drives but can't use the additional space. I'm out of slots and using the majority of the space. To fix it I'm probably going to have to wait until I build my next NAS unless I want to send 90TB of data up to S3 and pay egress to get it back afterwards.
