I too use only stainless steel. But there's layers of aluminum in between to quicker distribute the heat and also to make it work on an induction cook plate

I imagine as long as the aluminum is entirely encased inside, and the only metal actually touching the food is steel, there isn’t an issue of leaching 🤔

Yes it's entirely encased. I invested in quality like 3 years ago when i figured out i should not want anymore teflon on my life. I did cook on teflon for some 15 years though. :(

But it’s soooo worth it

That sword cuts both ways.

That means you can turn off the burner on the stove top range before you’re done cooking and still get some useful cooking heat out of the cast iron.

Feature, not bug

I just moved back to cast iron from stainless. Meat cooks much better on cast iron.

Cast iron pans are also heavy. It makes me tired while cooking.

I use cast iron on a propane stove and it doesn’t take long to heat. Are you using an electric stove?

Carbon steel is king. Seasoned non stick like cast iron but even more non stick because the metal is smoother. Light and fast temp control like stainless.

I have a cast iron, works great. Recently got a large stainless steel wok with glass lid and steel spatula for $25 at Costco and I love it! Been wanting a wok for a while.
