I trust my Haven relay, it’s the I only relay I write to it, I send my notes to a select few others on my blastr list.
I post pictures with my precise location... My OpSec is essentially non-existent, so what I would prefer is for the default behavior to be a balance between security and convenience. I know that both can't be achieved at the same time, but finding an equilibrium which would work for most users would be great.
I often use a VPN, but I've got my full legal name in my profile so in my personal case I feel that IPs won't do much either way as far as making it easier to get my general location.
I don't know how to use Tor, I remember trying it years ago and it was too slow and confusing.
I don't trust any relay 100% but what else you want us to do? I'm not going to try everything possible to hide. One way or another someone will find you if they truly want. That's what the 2nd amendment is for. If a relay administrator comes to your house, the 2md amendment gives you the right to defend yourself with a weapon.
We should not live in fear but why would a relay administrator expose our IP and tell everyone where we are located? It's possible but I think if you stick to the paid relays they want your business so they won't try to expose you.
Amethyst has a Tor running inside of it. We solve this for you.

Not trying to hide, but I'd trust any runners of the big relays before any workers of a big tech company
