Square is the likely PoS to start this trend.

If someone cloned Toast PoS and made it invoices on the receipt instead of CC payments they would kill it

I think ZapRite is trying to do this at scale with LN capabilities.

Parker Lewis has a thesis that one of the next waves of adoption is going to Bitcoiner business owners preferring payment in sats. It’s a better / cheaper / no KYC way to stack. I think he might be right. Remains to be seen if ZapRite gets it right.

I'm literally writing up exactly that in the payments policy for my prospective egg business. Eg

"6000 sats or 4€. Please note the EUR price is 15% higher in real terms, due to the extra expense and friction dealing with the bank.'

Oh I can go back and look at receipts in the history, so here it is. I use Speed wallet because it lives up to the name. I'm sure they all work the same way.

I think it appears that way in all LN Wallets I've tried. Isn't it because it's not actually a record of the payment going through the blockchain, but rather a promissory note that it will be bundled into some future blockchain payment between the two holding wallets? I have a vague recollection of reading that somewhere. I think that might be how all off-chain payments work, give or take
