Survivorship bias. If they died from salmonella poisoning, they wouldn’t be around to tell you about it. 
I bet it makes quite a bit of difference if you make your own cookie dough with fresh eggs vs the much more likely scenario of pre-made, processed cookie dough.

Lethality in otherwise healthy people is less than one percent. Healthy people usually get an upset stomach and diarrhea and recover in less than a week.
Risk/reward.
I hope it's much less than 1% cause I'm not going to stop eating that cookie dough ;D
