My go to is a cast iron skillet. Very versatile.
I have 2 steel (1for eggs and pancakes, 1for prepping sauces and dishes) and 2 cast iron (meat and simmering)
Whichever I pick, it depends on the usage
Coated with marble. My choice 😊
Carbon steel
Pros and cons abound. If you just want to be able to cook consistently and clean easy... get a non stick but the key is the thickness of the pan. Cheap thin pans get hot fast and burn everything (including the coating). Find one that is >= 3/16" thk. Never use anything metal as a spatula... heat rated rubber only! It wont last forever like cast iron, but sure cooked my breakfast nicely. Keep data from turning panckaes with a butter knife :)

Get a stainless steel pan from a restaurant supply, all the pros of cast iron, but easier to clean. Won't look pretty like an All-clad, but looks aren't important to the food.

Learn to use them properly, and you’ll never need a ‘non stick’ pan again.
