Well, I am in the car business so if there's a market to "de-computer" your computered cars so it stops sending a signal to the mothership but still all of its functionality, I can probably start on it now.

Yes, if not worse. High end cars also need high end data or telemetry for future improvements, etc etc. Understandable.
They can check how you were driving your car especially within their warranty period. They can void warranty if they find out you did some reckless driving that caused some mechanisms to malfunction.
