So easy:

- 1 egg yolk in mason jar

- Add some vinegar, sugar, lemon, mustard, salt and pepper

- Put immersion blender in and add water til it touches blade

- Gently put oil, 1:4 olive & canola I find is delicious

- Activate blender and slowly pull up. Should form an emulsion almost immediately.

Better mayo than you'll ever get at the store

*About half cup of oil per egg yolk

My recipe exactly except I use avocado oil and no sugar.

I only use a bit of sugar, like a teaspoon, because it cuts the vinegar and brightens up the lemon notes in the mayo. Definitely not enough to make it "sweet"

💯 homemade mayo is healthier and tastes better, but homemade hummus tastes like a completely different thing.
