I find switching up the type of tea (black, green, rooibos, herbal, etc) brings about a some great flavors and makes drinking tea more interesting.

A gaiwan can be fun if you're doing loose-leaf tea. You can control the astringency a little better, also.
We do have some infusers but I’ve never tried using them. I’ll look into it, thank you 😊
Not consuming alcohol is great. You’ll definitely see the benefits in a few months. I still consume alcohol but it’s limited to special events like weddings. And even then it’s limited.
It's probably the tannins. If you havent yet, you can cut the tannins by binding it with a protein. Cream or milk works.

Also, different teas will steep for different amounts of time, so you can experiment with that to reduce the tannins as well. I have a black tea that shouldn’t steep more than 3 minutes, and another that can go 5 min and still be good.
And what food you have with the tea can alter the taste of the tea and the food.
