I use stock android now I couldn't handle it for more than 3 months
There is a FOSS keyboard, FUTO, you might want to give it a try. It offers "swiping" if you, like me, hate typing...
I personally use Google keyboard without network permissions.
Is it possible to turn the swiping off? Does it have emojis and text replacement?

Text replacement is a functionality where you can set shortcuts for strings of text. For example I could havre it that when I type omw, the keyboard replaces it by "on my way" or if I type zpepe it could replace it with a tenor link to a pepe gif
I've been using HeliBoard.
I use Gboard but just deny all permissions (including network connectivity) except sensors. That's the beauty of GrapheneOS. You can deny and sandbox apps to such a granular level. I do the same with Google Photos & Camera. Allow sandboxed Play Services but disable Google Play itself.

And to deny permissions you go into app info right?
Gboard is the stock Google keyboard that ships with Pixels. You can find it in Aurora store. When installing, GrapheneOS will ask if you want to grant it network connectivity. Just deny. Alternatively, you can long press the app and open settings. Adjust permissions as follows:
