Slice them into quarters and weigh them, tare a jar add them to a the jar. Take a 4-6% ratio of salt to mushroom weight. Add salt to a small pot, one tablespoon sugar or not (I feel this rounds out the flavor and sweetness of the mushrooms). Add same volume of water as jar to pot. Add aromatics like clove, bay leaf, juniper, chili flakes, peppercorns whatever you like but don’t over do it. Bring pot to a boil and pour in mushroom jar. Seal lid and let sit until room temperature. Refrigerate and give them a couple of days before serving.

You can add rice vinegar as well, at 2-5% of liquid volume if you want.

Thankyou this is the kind of content I was hoping to see when I first joined nostr.

I was going to ask how you manage fruitfly but then you showed us you collect the fallen fruit and feed it to the chickens.

That reminded me of some, have you ever heard of a chook food forest? Essentially just a very large coup, with fruit trees and other deciduous trees growing inside.

Low maintenance, chickens get most of their food scratching for beetle larvae amongst the leaf mulch and eating the maggots from the fallen fruit.

Really enjoyed this.

Motivating me to get back into the garden, got so much work to do before the weather warms up.

The rabbit garden is very interesting.

Awesome food forest.

Seeing the ripe raspberries has got me excited for the coming season.

Going to forage so many raspberries and blackberries in February.

After the 2019 bushfires native raspberries started sprouting where the fires had burnt I had never seen them and didn't know they existed before that but we've got two distinct species of native raspberries in Australia.

One of the fence lines is covered in them and they're all through the forest.
