I'm basically in the same boat but i switched (back) from mac to linux right on the brink of the M1 release (i did not want to be the guinea pig for their first model, nor be the last one to buy an Intel).

It is, however, very personal. The mechanical switches are very different from the ones on mac keyboards. I am quite happy with it though.

I quite like the Mac style ones with minimal travel.
Keychron has a lot of nice options
Fedora Workstation
I can recommend the Glove80 or Kinesis Advantage 360 if you want an ergonomic split keyboard with lots of configuration option. You can also flash your custom layouts
Went for the Logi K950 + M750 combo.
Happy so far.
Need to get used to Linux shortcuts again. 😬
The mouse in particular is super nice.
