What do you like to do? The options are limitless.
Good food, nice nature, amazing scenery
Sounds like you should check out Sapporo. If you can hop on a flight and check it out for a day or 2. Its in a beautiful mountain region with hot springs, the Hill of the Buddha. Maybe you can venture from there and go to the northern most tip of Japan(Wakkanai) and see iceburgs.
Honestly you could throw a rock and hit a good place to eat. Especially if you're not in a touristy area or have diet restrictions. This guy goes into every hole in the wall around Tokyo and for the most part he's had good experiences https://m.youtube.com/@japaneat/shorts
Osaka is known to be a foody haven. They have covered streets full of small businesses and vendors. You gotta go in the alleyways and follow the salary men. They know what's good and cheap. Just avoid Dotonbori. Its fun for pictures but everything is over priced.
I think Kobe would be worth a day trip. Of course for their meat, but they also have an herb garden on the top of a mountain. It should be in full bloom right now. We took the ropeway up and walked down the mountain. It might be crowded though. For the meat you have to verify that it is legit. Some places use sneaky wording. If they really do have the real thing they would have a certificate and all the trimmings because they are proud to have the real thing.

Katzu don is one of my favorite dishes there.
They pretty much serve it everywhere

Shimokitazawa is my go to spot whenever I stay in Tokyo. You're a walk away from taking a train to Shibuya or Shinjuku, vintage stores, live houses, a supermarket, and a bunch of restaurants.

Shopping: Find the Burton flagship store and then wander around the backstreets around it
Two Rooms in Aoyama is a good bar for gaijin
Just wander anywhere between Shibuya and Harijuku and you'll find all kinds of shopping, restaurants, and nightlife
