Depends what you mean by security. iPhone is already secure assuming your device is fully updated.

If you mean privacy, there's little you can do if your iCloud account is tied to your identity. Apple knows everything about your phone usage regardless of a VPN.

If you want to hide your IP from Nostr relays a VPN would do that. Mulvad, Proton & IVPN are what most mention.

I personally wouldnt bother with Tor unless your going full on anon, creating a new nsec and willing to put up with a slower than expected performance forever.

iCloud private relay only works in Safari, if you are using Nostr on Damus app it doesn’t go through the relay,

I recommend either Proton VPN, Mullvad or IVPN, all are great choices, and select a server in a privacy friendly country, like Sweden or Switzerland,

if you want to use Tor tho, the only trustable client is Orbot for the iPhone

If you're using the Apple store, you've already lost. Consider a Pixel phone with GrapheneOS (Why would you use an American proprietary OS with the US PATRIOT Act and US CLOUD Act in place?) for starters.
