In case anyone's making hot cocoa this winter, please follow the correct protocol:

Heat a cup milk on the stove until it's steaming. In the meantime, mix 2 tbsp of honey or maple syrup with a tablespoon of cocoa powder until it's smooth. Slowly mix in the hot milk.

Perfectly smooth and rich hot cocoa. Save money, drink healthy. Add some spices to the cocoa powder if you want. Use raw milk if you can get it.

The honey / maple syrup is completely unnecessary. Milk is already sweet; it contains its own sugar (lactose).

Yes, the longer you keep it at temperature, the more bacteria you kill.

But I think it takes a long time if you just heat it to 130-140 ish. The cultures don't just die all at once.

I might decrease the syrup, but that's just a matter of personal preference. The simplicity and ease of the recipe, and the smooth and creamy quality of the end result is what really makes this recipe a gem.

Sounds intriguing; I want to try. I just prepared a whole bunch of (yes, raw!) milk to become yogurt and the hot milk smell had me wishing for hot chocolate something fierce! I didn’t give in, but maybe tomorrow I’ll do this with some of the milk that’s left.
