Indeed. Every single person I’ve talked to around here wants it to happen. Problem is there’s no oak wood.
I’m thinking, if I can secure a steady supply of fruit wood then the inland north west might have a shot of having its own particular style of bbq

It is gorgeous around here. I do miss the desert southwest though and good Mexican food. Not the heat though. I don’t miss that.
There’s one place I’m aware of in Seattle, but it doesn’t quite compare.
I ate at a bbq place on what seemed like the “far side” of Seattle. It was ok but nothing I’d write home about.
