I don't generally use the phrase "not your keys not your coins". Instead I generally say that people will use whichever layer(s) makes the most sense for their needs.

Because I agree with what Hal Finney wrote in 2010 that Bitcoin will work in layers by necessity.

Choice is good, I use them, even WoS, everyone can decide, and this options help removing onchain pressure, the problem is if you want onchain and can never have it because one day only banks and institutions can afford it and everyone is stuck with a non permissionless alternative like a bank, where you have mandatory KYC. That is my concern.

That’s why I like chaumian mints.

Permissionless to set up, permissionless to use, and private by default.

Custodial?

You can run your own mint, but yes, custodial if you’re using another mint
