Started by marinating the chicken. Then get the veggies started low and slow #foodstr

The refried beans are easy to prep while the veggies are cooking. A can covered in Mexican cheese. Throw in the oven at 325 for 15-20 minutes.

Smashed the avocado with some salt, pepper, and dried minced onion. Usually I’d make a guacamole but don’t have the proper ingredients…

Lol. I’m sorry! We usually do carnitas but recently bought a ton of chicken thigh at Costco. I agree, chicken thighs are underrated AF.
