It’s the freedom tech equivalent of mailing a registered letter to yourself and then leaving it unopened so the information can be proven to not have been forged/modified after the fact.
I understand that. I don't understand the fucking chain of attestations and the calls to the servers and whatnot.

Very simple:
-Valuable data must be trustworthy
- we can do this by leveraging bitcoin immutable timechain
- we simple get a fingerprint of the data via hashing and we can collate millions of hashes into a few bytes using Merkel tree
- we inscribe this in the BTC timechain
And voila we have immutable proof that such data existed at that blockheight
If you have hashes of data files then the timechain would the secure database where to look it up
