I think cheddar would overwhelm gru. Plus cheddar cooks differently I’d be afraid to do it together.

I'll try a gruyere grilled cheese then.

Brie is insane fo grilled cheese. I would never use Brie.

I've never had it. I just have friend who thinks it's tasteless.
