Rice and peas with soy sauce and chili sauce topped with fried shallots

What kind of chilli sauce?

Sriracha is great but sweet is good too

Acids go well with fish, citric like lemon or lime

Capers, butter and some other herbs too.

Why capers? That’s not acidic.

Good contrasting flavour, not acidic.

Light soy sauce

You cook the salmon in white wine and soy sauce? Have you tried white soy sauce?

Stir-fry garlic & onion until translucent.

Add chopped bell pepper, stir 2–3 min.

Add salmon (large cubes). Let fry ~1 min.

Add 1–2 tbsp each wine & soy sauce.

Stir-fry 1–2 min.

Toss in spinach, optionally more soy sauce.

Stir until wilted.

Done! Serve with rice. 🍚

And never used white soy sauce before, only the light and normal versions. Interesting suggestion!
