Wow it was so GOOOOOD! Stuffed with red onion, garlic, thyme and fennel with a cinnamon maple syrup glaze at the end.

Let the fat drip down on some potatoes we grew.

I’m still licking my lips. 😋

I was just happy the kids and wife ate it and liked it. I’ll definitely be doing it again. Rabbit is next on the checklist.

Heads up on the rabbit. My husband has issues with it (cute fuzzy bunny) as he sees the whole carcass in the freezer. When we butcher it out though it looks like just meat & it’s not as creepy to him.

We pull the legs off & cook like chicken wings - buffalo sauce & all. We cut the torso in half & cook like a chicken breast. Meat is awesome, but the 1st time we did a litter of bunnies they sat in the freezer for > a year as he couldn’t get past it. Parcel it all out, it’ll be less hard to consume if they have trouble

Great tips. I had a tough time with the chickens. A- the culling wasn’t a smooth process. B- the meat was very tough. The air rifle is now the preferred method.

The rabbits I’ll likely do are wild in our pasture so no emotional ties to them.

This duck was farm raised. Unfortunately he was being too aggressive towards the hens so he got the cut.

The taste of the duck fat alone is so tasty.

I still want to try goose. I hear it’s similar.

Yeah goose is nice too, but like maybe a once a year thing- duck can just replace chicken for everyday stuff 😛 Also I find goose much harder to cook properly

Interesting. I’d just like to try it. Christmas goose used to be popular and now it’s almost unheard of.

My neighbor has given us the occasional goose breast from hunting. They’re delicious!

Apparently it’s easier when the duck is still fresh and warm. Only took me about 10 minutes. Wondering if the chicken is as easy?

The feathers on our duck were incredibly difficult to remove! We have friends who don't even bother and will just skin the duck instead (which is nuts! losing all that good fat!) Chickens definitely easier, although having a good chicken plucker drum machine gets it done in like 30 seconds. Even that didn't work well for the one and only duck we did. I wonder if it's a breed thing (which doesn't really make sense to me but I dunno)

Hmm idk either. This one was a Mallard. Plucked within 1hr of termination. What breed did you have?

Khaki campbell. Same timeframe. We scalded them first maybe that was our mistake. Did you do that?

I didn’t scald but I can assume that when doing that it shrinks the skin and tightens down on the feathers. This is what I noticed when cinching the down feathers. The skin noticeably shrunk close to the meat
