True. You have to actually refine Tallow a few times, if you want to make it the purest.
I cook popcorn with beef tallow. Also season my cast iron with it. I cook a lot with ghee rather than beef tallow just because I like the flavor of butter.

Tallow and ghee are both great, they just excel at different things and overlap in others 🫡
For cast iron seasoning, highly recommend ghee over tallow mainly because of the higher smoke point.
For popcorn, can easily go either way based on taste preferences!
