Very nice! I still have one leg of lamb left. Share the recipe!

Takes 5 minutes, rub harissa with lemon, stick a few garlic cloves in, cover and roast for 3-4hrs 270 or so.

Lotta trimming of fat and fascia ahead of you but well worth the effort. I’ve been smoking grass fed LOL on my green egg and prefer it to every other meat alternative.

It’s going in the sheet pan for steaming/roasting, so I want the fat to melt and cover the meat

Enjoy, post the final pic. I’ve always trimmed lamb as the fat doesnt seem to render like other meats, but always open to different methods
