Cream cheese is such a cool ingredient. I use it pretty regularly as an emulsifier & thickener in sauces.

I steam my potatoes in the pressure cooker so that they're perfectly cooked & hydrated but not sloppy.
I then use the ricer to get them perfectly smooth before adding lots of cream & butter.
