what flour and what hydration do you use?

It’s mostly based on this ratio, but I adjust it depending on the weather and the type or brand of flour.

290g Unbleached bread flour

30g Dark rye

30g Whole wheat

With 70% hydration 💧

Beef with creamy hummus sauce

I marinated the beef with olive oil, salt, garlic, and some fresh herbs (thyme, rosemary, and tarragon), then gave it a good sear.

I came up with the sauce on the spot because I had a bunch of hummus left over from when I made kofta.

Here’s the hummus sauce recipe if anyone’s interested:

• 100g hummus

• 100g whipping cream

• 1 tbsp olive oil

• 1 tbsp chopped garlic mixed with some fresh herbs (I used half from the beef marinade)

• Salt, black pepper, honey, olive brine and chili flakes to taste

On medium heat, sauté the garlic and herb mix in olive oil until fragrant. Add the whipping cream and hummus, and stir until combined. Keep whisking until it starts to bubble, then lower the heat and add your seasonings. Simmer and whisk for about 5 minutes.

To assemble, I started with a piece of bread, then layered sauce, mashed hard-boiled eggs, more sauce, steak, another layer of sauce, a sprinkle of Parmesan, and finished it off with a drizzle of olive oil.
