Do you have any info on duck fat?

The smoke point of duck fat is 375F putting it on the lower end of high heat cooking. You basically wanna look up the smoke point for any oil and stay safely below that temp. I think duck fat has higher linoleic acid than olive oil, maybe 20-40%.

There is compositional difference as outlined in the chart and other charts I’ve posted. Highest smoke point and OSI. Lowest linoleic acid levels.

Not only is the linoleic acid content of ghee, tallow, and coconut oil supreme, but the Inherent Oxidation Susceptibility (IOS) is unmatched*.

*coconut oil not listed in the chart, but due to the high saturated fat content, it's comparable with ghee and tallow.
