Pricey, but Filson 'Tin cloth' fits the bill. I don't personally own one, but I've only heard great things
This, it is wax embedded in cotton canvas.
There used to be that stuff that they made RAF flying suits from. Ventile ? Some manufacturers still use it I think

buying a cotton canvas jacket and waxing it yourself would probably be the best option.
why do you not synthetic fabric though?
Petroleum plastics are poison. I'm reducing my exposure to them by eliminating how much synthetic stuff I wear.

If you end up getting a zip up jacket, make sure the zipper tape and zipper aren't synthetic since that's an often used touch point.
Natural material jackets also may still use synthetic materials for interfacing on collars and cuffs for stiffening but usually those are encased in between the layers of fabric so it might not be touching you as much.
Yup. I'm less worried about those kinds of things, but... I also would prefer not to have those.
I could wax a jacket. The issue is that most cotton outer jackets I know of are lined with synthetics, like the carhart jacket I already have.

I have a Korean war G.I. issue jacket that I melted bees wax into. It's held up for a very long time.
I don't have any recs on current jackets, but a suitable canvas one can be made to work (wax and a hairdryer)
Honestly.. leather.. I've never found anything better.. and then you can treat it regularly with Mink Oil and a water repellent and you're good to go.
Waxed canvas is the answer. I’ve had several pieces over the years. Very water resistant when properly cared for. Down sides are that waxed canvas doesn’t breathe well, can be heavy, and is stiff in cold weather.
