An interesting side effect of a large number of Indian immigrants coming to Canada and becoming truckers, is that great Indian food started showing up in truck stops.
In my original home town, the place I used to go to for a good bacon & eggs or a handmade burger now also has a selection of great Indian dishes. The butter chicken there is amongst the best I've had 😂

Similarly, we have a little greasy spoon diner here that was bought put by a Korean family. Bulgogi omelets became my new favorite thing for a while. 😅

The Best Chinese food I've ever had is in a little town, Cabri, Saskatchewan. The parents speak very little English, and their children, who are fluent, work the front.
The ginger beef is to die for. Nothing like the deep fried junk at most Chinese places. Real sauces, and the meat is crispy on the surface but tender meat inside. It's even got pineapple in it 😂
Damn I need to go on a road trip 😋
