Olive Oil is one of the most faked/adulterated products fyi. People basically cut them with seed oils to cut cost and from what I’ve seen it’s imposible to tell if it has been cut with seed oils. Definitely worth buying the more expensive ones cause the cheapy ones in plastic containers are almost definitely mixed with seed oils.

Yeah I buy decent brands of Extra Virgin - not cheap, but not super premium if used for cooking.

Do you have any recommended brands that are widely available in the US?

I personally think it's better to just mostly avoid it. Heat tends to damage the fat (so does light) & good extra virgin olive oil has a really strong flavor that I'm not crazy about. I think both olive oil & avocado oil carry with them a pretty high oxydative load.

I generally feel best when I cook with tallow or lard.

See I LOVE the flavor of premium olive oils. I have been to olive orchards and tasted single varietal oils that are mind blowing 🤤

But… I hear you on the every day stuff. Might try using more animal fats for cooking

Not that I can think off the top of my head. I would who to a good grocery store or a boutique fine foods store and ask the people that work there

had an italian dude pick up a huge tub of olive oil for me and my family. straight from italy.

This explains why adding vanilla to flavor shit (even when it's supposedly real) seems to always be a problem for me.
