Don’t eat meat, but it looks great!

I usually go by touch. Sear even hotter than that and finish with indirect heat. Charcoal Webber grill is perfect for this.

I enjoy the process. It's like you're communicating with the steak & grill.

At the end you get to unveil the deliciousness.

I use a combination of time, visual cues & touch/spring to intuitively cook.
