Ubuntu Mate or plain Debian
Varies on the context.
Server: Debian if I need a stable system or Fedora if I need to run something new and updated.
Desktop: Fedora again because the reason I mentioned above or Linux Mint.

Ubuntu is Opinionated Debian.
Throw the cinnamon theme on top and you’ll probably like it more.
