Reverse sear. 225 degrees the oven until it reaches 110 degrees. Then sear at high heat in ghee or beef tallow in a cast iron or stainless steel skillet until it reaches 125-130 degrees. Might get smokey. Rest for 5min and slice⚡️

Oh I know… I have my wife on standby under the smoke detector to disable it and of course have all windows open 😆

In an apt, I’d broil it on high.

Otherwise, throw it on the grill if possible and reverse sear if not.

Broiling is also a great idea 🤝

Yeah, I’m thinking broiling it in the cast iron with all the fans going.

This is good, I just heat it up for 10 minutes in oven while broiler is on below as a rough/sloppy version
