Open face steak sandwiches. Home made garlic bread with provolone cheese and spinach baked in the oven.
Garlic bread, now that’s something I’m very good at.
Reverse sear. 225 degrees the oven until it reaches 110 degrees. Then sear at high heat in ghee or beef tallow in a cast iron or stainless steel skillet until it reaches 125-130 degrees. Might get smokey. Rest for 5min and slice⚡️
I live in a NYC apartment, sir. My smoke detector goes off when I even think about doing that. 🔥🚨
Oh I know… I have my wife on standby under the smoke detector to disable it and of course have all windows open 😆
This is good, I just heat it up for 10 minutes in oven while broiler is on below as a rough/sloppy version
As close to room temp as reasonable
Salt and garlic rub
Broil on high 3-4 minutes per side depending on how thick the cut is
After cooking can garnish any of black pepper, dill, pickled cabbage, capers, onion, scallion, honey, or tart berries
Get a second one.
Freeze it. Put salt and garlic salt on it. Air fryer on broil mode at maximum temperature. Put it in frozen, lifted up near the heating element with a metal rack accessory. Flip it after 10 min if steak is of medium thickness. 8 min later steak is juicy.

Yeah there's some crust. Not as good as a grill. But the juiciness
I don’t have an air fryer but that’s interesting.
High heat BBQ or Cast iron
About 20min before set out on paper towels, blot top. Goal is to remove water (better crust). Salt and pepper both sides. Push in the salt, it begins breaking down connective tissue.
Cook on high heat, use touch to verify.
Let stand on cutting board 5-10min, immediately add big hunk of butter on top after removing from heat.
It’s only 10z . Quick pan sear to desired temp. Pull early always
