Grinding before rendering works well. I’ve only done it a couple times but I’ve seen the method of adding water to it after it’s rendered then letting the pure fat rise to the top and solidify as it cools seems to be a good method for purifying or removing sediment etc

I made cultured butter once using yogurt and heavy cream. I assume the cultured cream is not necessarily sour cream but more of a creme fraische. But if memory serves it was basically the same process as yogurt.
