I know there are many US clones of Parmesan... I have grown up in the area of production of "Parmigiano Reggiano" (my dad even worked as a cheesemaker for over 10 years before I was born).
I like the 30-months version of Parmigiano, it's a good compromise between taste and texture...
My 2025 target is getting back to the 75-80 kg range, the one I had for 10 yrs until 2020 lockdowns (82 now, down from 90).

Right, but there are also scarce homes. If you buy the right house - and it usuallly takes a lot of fiat - under normal circumstances it will increase its fiat price. I agree with you it is a liability though.

As a freelance engineer I have been working for the past 20 years in two different sectors, very different actually: elevators and acoustics.
In 2022 as the only unvaccinated engineer (out of 50) I were not allowed to work on elevators for four months - Covid laws were nazi-style in Italy - but I came back and kept going.
Right now I feel time has come to stop and work less, so beginning Jan 1st I will only play in the acoustics field.
I liked both of my jobs, but I am not a kid anymore and I am sure it is the right choice.
