Taiwan takes tea seriously! Buy local and by the kilo. The lady opened up some barrels for us to smell and see the leaves.

We were looking for high mountain oolong tea 高山烏龍茶 and she showed us a couple different ones at different price points, ranging from 190k to 478k sats per kg. The premium price is for the quality of leaves, method of preparation and region. The difference between the leaves is evident by the smell. More so by the taste too but she didn't bother to make any for us since we were small potato customers (buy one kilo vs multiple tens of kilos)

It was really cool to see a tea shop like this. My first time even though tea has been a part of my life for as long as I remember.

I should probably take some time to really study tea ceremony a little more.

it lagged horribly. the story skip was so unreliable when playing in a group. Like I'd be able to skip the story, but the other person couldn't. I had already played through the first part of the game several times in the beta so I didn't care to watch the cutscenes again.

I got kicked out of the game several times. Game crashed a couple times.

Just way more laggy and unreliable than the first time around.

I really hope they learned a lot from it cuz that whole experience sucked.

A coffee date this afternoon at a kissaten 喫茶店. This particular cafe has been in business for 80 years which means that when Japanese imperialists were occupying Taiwan, they likely drank here too.

A kissaten is a Japanese style cafe that serves fine coffee, tea and desserts. The one we went to roasts their own beans on the first floor and has a cafe on the upper floors. I love how they kept to the style of the time with wood paneling, fine china and period decor all over.

The coffee was good too. I got the light roast which was fruit forward and very light in the mouth. Not what I normally drink. The others got the house dark roast which is closer to the usual coffee we drink but definitely more complex.

the big city Taichung 台中 is to the left where you can't see. What you're looking out on is considered the suburbs. farmland dabbed in between multistory buildings. some manufacturing and processing buildings too.

Sunmai was one of the first brands into the Taiwan craft beer scene starting in 2004. there are lots now!

iirc, the dark one is a roasted honey dark ale, then going clockwise, a grapefruit IPA, a kumquat lemon lager and finally an herbal tea lager. Cheers!

I find that being comfortable with being bored really helps with getting chores done too. having a quiet mind while doing dishes for example. I have wasted too much time scrolling on my phone looking for the perfect podcast, song or video just to do five minutes of chores.

I posted about our on-grid strategy at Standard Bitcoin.

Now let's talk about our off-grid strategy, which aims to tackle the stranded well problem in Appalachia with bitcoin mining data centers and generators produced by Upstream Data.

Appalachia is filled with shallow oil basins that were drilled years ago. At the time, it only made sense to extract and transport the oil out of the area. There were very few nat gas pipelines built to bring the associated gas to market because it wasn't economically viable.

This has created a massive stranded well issue. When the oil wells went dry producers capped the associated gas wells and left them behind with the land owners. A lot of these wells are poorly maintained, degrading, and sometimes leaking methane into the air.

The only profitable solution to this problem is bitcoin mining because bitcoin mining is location agnostic. Meaning that miners are willing to show up to the well to monetize the gas on site. Nothing else makes much economic sense.

Our ability to leverage this gas to mine bitcoin has some positive knock-on effects; it ensures the wells are properly maintained, prevents methane leak, and turns a stranded asset into the hardest money on the planet. Turning waste into bitcoin is a boon for economic prosperity.

Beyond this, we are exploring ways to make sure the land owners benefit from allowing us to come on their property to monetize the gas. Aligning incentives to help them become more economically secure.

In the long-run we believe this alignment will strengthen rural America economically and breathe life back into a part of the country that has been cast aside by the coastal elites. Strong rural economies are desperately needed if we're going to right the ship in the US.

I should caveat this with the fact that not every stranded well is equal. We may not be able to save all of them, but we can certainly make a material dent to begin turning waste into prosperity for those who desperately need it.

Another caveat, stranded wells are just one subset of abandoned wells that are scattered throughout the country. There are ~120,000 orphaned wells out there. These are wells with no current owner or maintainer. This is another problem that bitcoin miners can help solve.

There are many problems to solve before we perfect our off-grid model at Standard. Many of them have to do with logistics. However, they are very solvable problems at the end of the day and we plan to work our hardest to tackle them.

We're very passionate about what we're doing because we believe deeply that the work we are doing both on-grid and off-grid to turn wasted resources into sats is going to have many compounding positive effects on the areas we operate in.

Bitcoin is a powerful tool that is revitalizing neglected areas of the US. Most do not see it yet, but they will in time. We plan to highlight the benefits of bitcoin mining on energy systems through our work as we stack some sats along the way.

Ordering sets is pretty common place in Taiwan. If you want to be fancy, you could call it tasting menus. It makes the menus much smaller so they can really focus on quality and make it easy to decide on what to eat.

Before this showpiece of a main dish came to the table, I had a cold appetizer, a soup and a small sashimi selection. After this, I had a little rice, dessert (matcha parfait!) and a pineapple-bitter melon drink.
